I have to ask though, what temp setting do you use on the stove? I had mine on "3" and the fish seemed to fry right up, but it took about 5 minutes per side to turn it brown and one piece was even overcooked. What do you recommend for temps? I only have a meat thermometer so I gotta go by the numbers on the stove element. XD
I must admit I don’t normally use the numbers on the stove. When I put the fish in the pan, I usually use the hottest setting initially to cook the batter so it seals the fish in. Then you can reduce to medium and carry on cooking until the fish is cooked and the batter becomes crispy and golden brown.
If you cook too hot you will make the batter burn. If you cook to low the oil will penetrate the fish.
@OriginalNakedChef Cheers chef. My mum told me to filter the oil and keep it in an old container. I have my doubts. Somehow upon re-use, things got browner faster. Easier to throw the oil and use a fresh batch. Oh well...

Might be a stupid question but what was in the pan before you placed the battered fish in it? was it just filled with hot oil or a mixture of oil and water?
I placed the battered fish into hot oil. DO NOT MIX WATER WITH OIL. Thats a very lethal combination.
I would normally put sunflower oil into a dry pan and wait for it to get hot. Than slowly add the battered fish so you do not cool the oil down too much.

It does splash yes! When I remember to use a 'splatter screen', that’s works really well. The splatter of oil does settle down eventually, but I would recommend buying a splatter screen if pan-frying the fish. They are effective and not that expensive.
@jockolong you can use an egg but i find it makes it taste better without and i use Worcester sause blessing of baking powder salt and pepper and sparkling mineral water to help make it more crispy

yeah simple. the other fish n chips vids are too complicated. some have them putting the potatos in ice water before frying and measuring exact amounts of 15 different ingredients for the batter.

It’s inevitable batter will eventually start to go soggy after being cooked, possibly due to the steam coming from the fish.
Make sure that you are cooking the battered fish at a high temperature so the oil does not start to soak into the batter & make it soggy
My best suggestions is serve & eat the fish straight after being cooked so it does not have chance to go soggy.
I have never tried it but I read that re-frying fish after it has gone soggy, will make it crispy again???

I don’t usually add an egg to mine but I know some other do add eggs.
As long as you place the battered fish in hot oil this batter does go crispy without an egg.

Use Guinness! It 's perfect to use when making fish batter.
It has a stronger flavour than most beers/ales.
Most of the time I make fish in a batter, I use Guinness :)
Let me know how it taste.
I normally use bottled Guinness.

Depending what I have used oil for cooking, I do sometimes use the oil again. Maybe not fried fied though as it makes everything else fishy tasting.
I guess the other alternative is to recycle the oil. But I know what you mean about waste.

You can try different beers or ales. I have another batter recipe that uses simply fizzy water if you want to view that video.
As time goes on I do intend to do some variations.

You can always remove the coating before serving it to them so they just have the fish

I think you will find most largers, ales beers and stout will work. If its got a nice flavour and bubbles then it should be ok.

@OriginalNakedChef thanks ive tried so many different combinations but i find some fizzy sparkling water just at the last minute in the mix works a treat also a sprinkle of baking powder still nice one chef

yeah simple. the other fish n chips vids are too complicated. some have them putting the potatos in ice water before frying and measuring exact amounts of 15 different ingredients for the batter.
this one looks easy peasy. I'm gonna try it! thanks
