  • My fish starts to go soggy after about 3-5 mins?

    Why does this happen and what do i do to stop this from happening?

    It’s inevitable batter will eventually start to go soggy after being cooked, possibly due to the steam coming from the fish.

    Make sure that you are cooking the battered fish at a high temperature so the oil does not start to soak into the batter & make it soggy

    My best suggestions is serve & eat the fish straight after being cooked so it does not have chance to go soggy.

    I have never tried it but I read that re-frying fish after it has gone soggy, will make it crispy again???

  • @kadz88 Heat your oven to about 350-450, depending on how how you oven gets. Line an aluminum cookie sheet with at least two layers of paper towels and place this on the center rack. When each piece of fish is finished cooking, place it on the cookie sheet. This technique will keep battered food crispy until it is time to serve. Line another cookie sheet and do the same thing for the chips. This helps when you are preparing party/family sized portions. Enjoy.

    I don’t usually add an egg to mine but I know some other do add eggs.

    As long as you place the battered fish in hot oil this batter does go crispy without an egg.

  • For years, my wife and I have done beer-batter fish, veggies, etc. As of tonight, we will never do any of these without Guinness Stout!!! This was the most wonderful flavor we have ever experienced re fish & chips. Thank you for the suggestion!.

    Use Guinness! It 's perfect to use when making fish batter.

    It has a stronger flavour than most beers/ales.

    Most of the time I make fish in a batter, I use Guinness :)

    Let me know how it taste.

    I normally use bottled Guinness.

  • Sorry, double post.

    Used your recipe and it was delicious. I used a small pot to do the frying though. Wasted alot of oil, but no biggy, rookie mistake on my part. I have to ask though, what temp setting do you use on the stove? I had mine on "3" and the fish seemed to fry right up, but it took about 5 minutes per side to turn it brown and one piece was even overcooked. What do you recommend for temps? I only have a meat thermometer so I gotta go by the numbers on the stove element. XD

    I must admit I don’t normally use the numbers on the stove. When I put the fish in the pan, I usually use the hottest setting initially to cook the batter so it seals the fish in. Then you can reduce to medium and carry on cooking until the fish is cooked and the batter becomes crispy and golden brown.

    If you cook too hot you will make the batter burn. If you cook to low the oil will penetrate the fish.

  • i love frying in a deep pan, especially tempuras or pakoras... but i just hate the amount of oil it wastes. Man i hate waste.

    Depending what I have used oil for cooking, I do sometimes use the oil again. Maybe not fried fied though as it makes everything else fishy tasting.

    I guess the other alternative is to recycle the oil. But I know what you mean about waste.

  • @OriginalNakedChef Cheers chef. My mum told me to filter the oil and keep it in an old container. I have my doubts. Somehow upon re-use, things got browner faster. Easier to throw the oil and use a fresh batch. Oh well...

    If I use oil for cooking fried eggs, chips, Spanish omelette etc (non meaty things) I always re-use the oil.

    Meat and fish products I get rid of it.

    Fish and chips used to be cheap in the good old days when fish was plentiful. Now it's becoming a luxury.

  • Just wondering chef, do you do videos on cooking corned silver side, or any meat products. My cooking is ok but with your nous i could be very popular in my household. Might even be able to have a beer when im not cooking.....:)

  • Great video mate, very easy to follow. The batters delicious with my mussell and toheroa fritters.....oh and thankyou, the boss lady doesnt moan anymore when i crack open a beer now...lol

  • Your pan is way too small and you overcrowded it. But you pulled it off! I do mine in the wok.

    I try and use a small pan otherwise you use more oil. You are right though it was only just big enough. Maybe cooking one at a time would be better :)

    You can try different beers or ales. I have another batter recipe that uses simply fizzy water if you want to view that video.

    As time goes on I do intend to do some variations.

  • Might be a stupid question but what was in the pan before you placed the battered fish in it? was it just filled with hot oil or a mixture of oil and water?

    I placed the battered fish into hot oil. DO NOT MIX WATER WITH OIL. Thats a very lethal combination.

    I would normally put sunflower oil into a dry pan and wait for it to get hot. Than slowly add the battered fish so you do not cool the oil down too much.

    To test if the fish is done, take the tip of a knife blade, insert it into the thickest part of the fish and very gently part a little of the flesh so that you can see if it is opaque all the way through or if there is still some transparent flesh. If opaque it is done and if still transparent it requires further cooking.

    If the batter looks like it is starting to burn, reduce the heat down and that should stop it.

  • I love southern-fried catfish, but this style of fish was always my fav. I like eating at Captain D's. I'm not sure I can even get Cod and Haddock in my area, but I guess I'll just have to find a place

    It does splash yes! When I remember to use a 'splatter screen', that’s works really well. The splatter of oil does settle down eventually, but I would recommend buying a splatter screen if pan-frying the fish. They are effective and not that expensive.

    That should be ok.

    They might not like the batter.

    You can always remove the coating before serving it to them so they just have the fish

    alcohol burns off. guiness is a nice dark chocolatey/ bitter taste.

  • @jockolong you can use an egg but i find it makes it taste better without and i use Worcester sause blessing of baking powder salt and pepper and sparkling mineral water to help make it more crispy

    I think you will find most largers, ales beers and stout will work. If its got a nice flavour and bubbles then it should be ok.

  • yeah simple. the other fish n chips vids are too complicated. some have them putting the potatos in ice water before frying and measuring exact amounts of 15 different ingredients for the batter.

    this one looks easy peasy. I'm gonna try it! thanks
