@Nancydah They have to. And good chef would be constantly washing their hands between tasks. Besides, it's extremely difficult to do any detail work with gloves on unless they are skin tight elastic gloves which is not always the case. It's better to use your (clean!) hands, IMHO. (Cake decorator.)
@Transformergirl "better" as in "more easy", I guess? Why not USE the elastic gloves then? Heck if surgeons can make heart surgery with gloves you should be able to decorate a cake.
@TheConnyB People use their bare hands all the time when they make stuff, esp in the pastry business. When they say hand made, they mean it. Have you ever tried to ice and decorate a cake with those shapeless gloves most bakeries are shirked with? It takes twice as long to do anything. As long as you have clean hands and fingernails and wash between tasks (and for god sake's don't like your fingers, gross) there's nothing to worry about.

So using it as a comparison for a fast pace high volume work situation such as cake decorating makes it irrelevant seeing as I do not have 9 hours to ice and decorate a cake. Try 8 cakes an hour.
