  • My first attempt at this was a miserable fail. I tried to save face by gathering all the butchered onions together and chopping them like I a mad man, you know, thinking that is how the pros did it. The result was inconsistent onion sizes and dozens of slices on the floor. Before anyone could walk in and see what I had done, I threw them in the pot.

  • Why risking horizontal cuts and not taking advantage of the already existing layers of the onion? What was achieved with one Horizontal (dangerous) and one Vertical cut could be done with two vertical cuts. no ?

  • @saslanis Agreed, the horizontal cut seems unnecessary and even dangerous. I've always done the vertical cuts only and the layers of the onion make it come apart into even pieces just fine.

  • @saslanis Because sometimes you need smaller diced cuts of onion for a mirepoix or when you want the onions to melt into the flavor. With proper technique you won't cut yourself but it takes practice.

  • yeah if you leave the bulb on for last the onion doesnt "cry" out as much and its much easier on your eyes...thats the number one tip to cutting onions...most people wack the bulb end off first thing, big mistake

  • I fail at this method of chopping. Just cut 4 slices of onion, chop them length-wise and across, Way easier and less waste product.Cheap potato knifes are easier to handle than chefs knives btw, just use them for a month and toss em out.

  • @J0k394 a good chefs knife will last a lifetime if well maintained. And you cant compare a cheap low grade steel potato knife to that of a professional grade chefs knife.

  • @96JUSTIN I'm not debating the lifetime. I've worked with expensive knives (at school, during cooking lessons) but for practicality, I (can't bold it, and it is capitalized already) prefer cheap knives. Matter of personal taste.

  • The main reason for this 3 step technique, is to provide consistant even cuts. When preping "Mirepoix' (pronounced /mɪərˈpwɑː/) a combination of onions, carrots, and celery; the basic ingredients for chicken/pork/beef stock. An even cut allows an even and porportional flavor thru out the stock. To say that the slightest difference from one diced onion to another can drastically change the flavor of the stock, I think not. When cooking for the riches, thats another story. -Chef WY-

  • This technique is not very safe since it is cutting the onion horizontally while your fingers are on top. One little slip, and the knife will alice through those pinkies.

  • It wasn't a chef's knife - it was a santoku knife which in my opinion is easier for chopping because the blade is the same level from front to back

  • @jpctx existed yes, but only became practical and useful when broadband became the norm. I started using it when I was about 12, before then I hated it, because of shitty dial-up. So I do remember not having the internet (or not using it at least)
