I do vary the mix to create different flavours of waffle like maple , chocolate and cinnamon. The vanilla waffle is the LEige waffle . I do make them smaller than traditional waffles in belgium by about 20g.
Iron should be at least 150 degC. The steamer I use is to control the proofing of the dough. I can take completly frozen dough and know that in 25minutes it has defrosted and risen and is now ready. With out the proofer It would take between 2 - 4 hrs to naturally defrost and rise.
The waffles are uniform in size because I make the balls round. each ball is measured to 70g
