i was in japan in 2009 ad one of the japanese sponsor told me that you have to be licensed to serve this . they actually train you to cut this fis properly or better yet safely. the fish is served thinly sliced and has a tingly after taste

口ついてるし、活けから〆て血抜きしたの?なら早めにさばいた方が鮮度がいいかも;;
活きてたら口は初めに取った方が安全かと思います。
ほっぺに傷がある様に見えたけど、これはちょっといけてないかも;;;
さばいている方なら分かっているはず(笑)
カエルのお肉を頭に付け過ぎなイメージも受けました。。。
頭はダシとしての役割を考えているので、切り口を変えた方がいいと思います。
色々なさばき方を知り、改善してきた方なら分かると思いますがこのはがし方は、身に内臓が残りすぎます。先に頭を切り離してから、内臓と身を分けた方が掃除が楽ですよ^^

他の「魚のさばき方」は非常に参考になるのですが、フグは一般の人が調理するのは非常に危険なのではと思います。法的にどうなのかはよくわかりませんが、少なくとも特別の免許を持っている人だけが営業として調理を許されるのではという理解です。したがって、ここでさばき方を紹介するのは適切ではないのではないかと思います。

ふぐをさばける人ならわかると思いますがitasanは素人にもふぐの構造がわかるようにあえて包丁を何度もいれてどのように包丁が入っていくかまで丁寧にゆっくり見せてくれています。
技術を見せたいだけの自己満足な動画とは違いますね。
