Oh and now that you mention it, dont forget to listen Dragonvarious by Dragon Guardian. Fuki has a really awesome voice, people just has no taste and let the others decide their taste, then the hate overflows :(
The picture fits very well. Now when I think of it Sariel and Shinki are pretty similar to each other. Both have angel wing (or what it now is), both are in Makai, both have white hair.

The haters can moan about the vocals all they like, they're just gonna have to deal with it! If they hate it that much they can find a different band that fits their style like everyone else.
And the thing thats annoys me, is that is a hate with any sense or reason. They just say she sings bad, some people in a high tone, others in soft tone, however, there are so many lovers of Miku, I dont find any sense in that but well... Glad you liked Fuki's vocal, shes awesome ヽ(`Д´)ﾉ
I don't see the hate towards Fuki either. Sure, the earlier albums vocals were kind of odd but as the time went she became a excellent singer (take this for an example, these vocals are great. Perhaps not the best, but still great). At first, I did not mind the vocals in the earlier albums since the instrumental part were the good stuff but as I listened I became more fond of Fuki's voice. I think their most recent album "So That A Star Shines At Night Sky" is a masterpeice, even if it's cheesy.
And now I suddenly have an urge to listen good old nightiwsh....
IMO yuki is one of the best if not the best female singer for touhou (the other are IOSYS when they decide to do serious stuff like border of death) On the instrumental vs vocals, well its depends on the person, for example flowring night by 龍5150 the off vocals sound totally different from the vocals, I like both, but there are ppl that hates the vocals version, and there are ppl who hates the intrumental one.

The reason that brings so much hate against Fuki in particular is because Yuki's instrumentals are so consistently good, and now that they've done a full instrumental album with Amazement Park the fact that they went back to vocals ticks a lot of people off.

IMO I dont really care vocal or non vocal at all, if the song rocks, I like it, and in my opinion Fuki helps UM songs to own, epic music + epic vocal. Not to mention that last Border of Life. The instrumental as you said is always gorgeous Yuki rocks, but I cant really take that so much hate seriously when there are thousands of loved vocal arranges. If they dont like her, fine, but no one should throw shit over her.
