  • when I have left overs from chicken I do quesadillas one night and chicken pot pie the other but these are good ideas too

  • Awesome.

  • These are wonderful ideas! I was wondering if you wouldn't mind saying how the chicken should be kept in the fridge to avoid food contamination. This is one reason I worry about keeping chicken more than one day in the fridge. For example, I know not to reheat chicken more than once but any other food safety tips would be very helpful. Thanks!

  • good stuff

  • good video but ya gotta work on the music volumn!!! blows your head off as you have to turn it up to hear you speak.

  • How can anyone prepare a roast chicken without seasoning it. Chicken as a whole in the western world is full of chemicals as they are reared naturally, so one needs extra seasoning to get some kind of chicken taste. I bet it tasted awful without any kind of seasoning...!!

  • I also wanted to thank you for not recommending the usual "eat more beans, rice and pasta".

  • Oh, and beans, rice & pasta are great meal, menu & budget stretchers, but there is more to it than that! Feel free to stop by my blog for more ideas, or to find my comment form-I'd be happy to answer more specific questions on Frugal Upstate as a "Reader's Question" segment. Good luck with stretching your food & budget!

  • Thank you for sharing this video. Please pardon my ignorance, but how did you roast the chicken? What spices did you use? And did you butter the skin, etc.

We are a small family of 3 and you inspire me to do a better job of stretching our food. Thanks again!

  • I'm so glad you enjoyed the video!

Honestly, when I roast a chicken I do it the dead simple no frills way-I just throw it in a pan and roast it without any additional seasoning, butter or anything. If I were going to go a bit "fancy" I might think to throw on some premade "poultry seasoning", sage (which is the main component of poultry seasoning), cajun spice or lemon pepper. But I don't usually remember to :)

  • I was just thinking....this kind of thing used to be what every Mom used to know.(I mean how to use leftovers creatively. And how to save electricity by roasting enough for a couple meals.

But now most people don't have that knowledge & skill anymore.

    Really sad, considering the economy.

I think your videos must be helping a lot of people make ends meet. Thanks for sharing this video.

  • Thank you for your kind comment! It's always so nice to hear that folks find my videos and posts useful'.

You are so right-these types of skills used to be just general knowledge-but it all seems to have skipped a generation somehow. Blame the 80's :) I really do hope that folks who can most use this knowledge are finding it. . .

  • Leftovers are awesome!!!!!

And the soup's always better the next day too!

    (But I'm laughing,too, because I have 3 teens & a "meat & potatoes" husband.........One 5-1/2 lb. bird & they're asking for more!)

    .....

  • #2-The pan is just a large teflon frying pan, and the lid is one of those "replacement lids" that you can buy. I don't remember the brand-sorry!

#3-Amount of meat. Yes, my kids are pretty small so they don't eat anywhere near what a teenager would! If you have a larger, or hungrier family you could start out with 2 chickens. Also, as RashtraVishnu pointed out, we tend to over consume protein in the American culture.

#4-costumes. Yes, it really was filmed over several days Dan!

  • Gee, guess I should respond to my comments a bit more frequently eh?

Glad everyone liked the video. To answer a few questions:

#1-The soup is my typical "use whatever you have in the fridge" method. I always like onion, celery & carrots for flavor, but you can add any vegetables you have.

  • Slick costume changes, Jenn!

Next time, of course, you're actually going to cook a rubber chicken, no?

  • So, it looks like you are using about a lb of chicken for each meal. My family eats a lot more than yours does, I think. It didn't look much of the roast chicken was gone at all. Nice video. I am going to try this but I think I will run out of chicken before the end of the four days. How many are in your family?

  • This is great stuff!

  • I get 4-6 meals out of a half of a chicken, so I think your video is awesome. I think we all tend to over eat on meat, especially when the chicken is in big pieces.

  • What kind of pan and lid are you using for your Chicken curry? I haven't seen one like that. I can't wait to try these recipes out.

  • What else is in that soup?? Is there cabbage in there? It looks yummy!

  • I love your show! It's great. I see a bunch of my friends have commented here, too!

  • WOW! Thats was great! With the price of food these days, it really helps to know how to stretch it! Thank you for taking the time to share!

  • That was an excellent video.

  • Glad you enjoyed the video! Of course you can freeze the meat, or even make up a casserole etc and freeze it for an easy meal later.

I just put about a tablespoon or two of vinegar in the water. It really does leach out the calcium. A fun experiment w/ kids is to soak a chicken bone in straight vinegar for a day or so. It will get all rubbery because the calcium goes out into the vinegar.

  • Wow. I have heard you can stretch, but seeing it, is believing. My husband could not eat chicken four days in a row. But I can freeze the cooked meat and using another week. How much vinegar do you use for making the stock? It gets calcium out of the bones?

  • Thanks for sharing it was great!
