I have a Creating Simple Forms in MS Word 2007 Part 2 that, although somewhat redundant with protection restrictions etc., touches upon tables and cell properties within them, plus the drop down form field.

But, for now, right click on the text box form field, then scroll down to properties, then limit the character length of the text box (it defaults to an unlimited character length). Table cells are better to use then trying text boxes and lines.the Part 2 video covers this topic.
