Getting vegetarian / vegan food living in the Midwest USA is nearly impossible. I had to beg my grocers to start carrying almond milk. Whenever I try to make it at home it ends up looking like oatmeal. I very rarely eat Tofurky, but if I ask for it at the grocery they look at me like I'm metal.
If you remove the water, the sticky part of the rice vanish. If you want it to be more sticky, steam it with the naturals all in there..dont remove the water of the first setting. It makes handling the rice easier.
If you don't have a bamboo mat, you can use plastic wrap. Also, if you can't find sushi rice or you don't like the flavor you get from it, you can make your own by making your own rice and making a mixture of vinegar as your base, sugar and some water. Also, if you're having trouble with tearing, try rolling your sushi with the smooth side out. Which means you would put your fillings on the rough side.
