Actually, the authentic way of drinking absinthe is to pour your absinthe in the glass, put absinthe spoon on top with a sugar cube on it and dissolve sugar into your drink with chilled water. The burning sugar method was popularized as a "tradition" when manufacturers of poor quality Czech absinthe needed a way to disguise the awful flavour.
Using sugar cubes was really only necessary when absinthe was hell bitter. So long as you have decent absinthe, most reputable people will tell you all that's needed is water. These guys that spread misinformation, pretending that their way is the only way, piss me off.
We're certainly not saying that it's the only way to drink absinthe, just the traditional way. Absinthe is a "Bitter" ingredient, and although quality has increased, many people still find that the sugar cuts the bitterness and makes the absinthe more drinkable. yea i sort of agree with you. Unless you were making several drinks, in which case you would make this first and let the sugar burn while you make the others.
But then again a decent martini takes awhile to make, but the only problem with the absinth cocktail is your really just standing there doing nothing while the sugar burns.
You could make the same arguement about marinating a steak, preparing a mojito or any other culinary cocktail... it takes time. The challenge is getting people to realize that good drinks take time, and drinking should be about the journey and not the destination.
