  • @Yuki1557 I don't think you should use the curry paste, since curry is not commonly used in Korean cooking. You could try another type of hot sauce. Hope that helps :)

  • This might be a terribly naive question; but, is there a difference between North Korean cooking and South Korean cooking? (for those North Koreans who get food)

    To be honest, I don't know much about North Korean food.. I heard of it..but never tasted it... I think..their food are very similar with ours..because we have same ancestors..and only apart each other.. for about 60.. 70 years ... thanks

  • @MrU2kite North Korean food is different in the ingredients they use and their taste due to its colder climate. It tends to be more bland and not as spicy or as salty as South Korean food. North Korean food is not too popular in South Korea due to its bland taste yet some dishes like North Korean Naengmyun are popular dishes.

  • I made this exact recipe last night. Was okay, but something was not right with it. Next time will eliminate the mayo, might be authentic Korean but to me does not taste right in this dish.

    I also will put in some cayenne pepper or maybe just more chili paste, was not spicy enough. But I think this recipe represents a great starting point, thanks much for sharing.

    Can you use sugar ?? since maple syrup has own unique flavor.. so it might not match with the food.. but if you still want to use.. you can try.. ^^

    yes you can.. the sauce taste good.. you just will lose the flavor from deep frying chicken..

    cooking oil and cooking wine are totally different thing.. so just skip the cooking wine to marinate the chicken..^^

    about 11/2 inch deep oil can be enough.. i use canola oil.. you can use other vegetable oils also..but not olive oil ... i use medium high heat... when you drop little bit of batter to the heated oil...if the batter floats on the surface right away.. the oil is ready.. you fry the chicken right before you serve them.. fry second time..and coat them with sauce and serve..

    yes you can..but ketchup gives this dish.. some unique good flavor.. sweet and sourness.. so I recommend you..reduce a little bit of ketchup and add more gochujang if you want make it spicier.. thanks

    Like Aeri mentioned, substituting the ketchup with gojuchang could be overpowering. I would suggest using red pepper flakes instead of gojuchang. It'll make the dish spicy without adding a heaviness to it.

    tteok is supposed to be chewy and sticky cuz they're made outta glutinous rice. if you're making them at home then add more water, if you're talking about the ones you buy... obviously there's nothing you can do about the one that's already made.

  • Do you mean cooking wine as in not wine, but used for cooking? Or do you mean real wine, but you're using it to cook. (cooking wine is never used here, it destroys dishes meant to be made with wine.)

  • @anonymouskittie it will taste really sweet and it might have a watery consistency b/c of the consistency of ketchup. most Koreans if they want the dish to be a bit sweeter use a bit of ketchup with the spicy sauce.

  • @aeriskitchen orange chicken is chinese food. its like sweet and tangy. u can make it spicy too if u want it spicy. it looks kinda like this mini fried chicken.

  • @iluvb33 The orange chicken you are talking about is Chinese-American, more like General Tso's chicken. A dish that no one has heard of outside the US and Canada. Oddly, this 'mini fried" chicken does look a lot like another iconic Chinese-American concoction, sesame chicken. But it probably taste more like KFC, other wise known as Korean Fried Chicken and not to be confused with the colonel. Korean KFC is skin-on, double fried, then tossed in a similar sauce as this mini fried chicken.
