@jen2c i found out it's a bit tastier to combine soy sauce, oyster sauce, fish sauce, sugar and a dash of white pepper powder. however if you use dark soy sauce then you can omit the sugar. sometimes i add some ginger slices too :)
Thai basil chicken is my 2nd favorite thai dish. I use vegetarian oyster sauce because my wife is allergic to seafood. (oyster sauce would put her in the hospital) I cube the chicken and pulse it in the food processor to get an almost ground chicken consistency.

for the traditional pad krapow kai, the fish suace is used instead of soy sauce (but the smell will be stronger). onion is not stired fry first with garlic and chile, it is added after chicken and all the sauces is cooked, and just before the holy basil leaves. the traditional and authentic cooking of this dish has no alcohol and sesame oil. but it's up to your taste to add. it just makes it not authentic.
this sounds too salty. for 1 chicken breast portion like this, I will put max. 1 tbs of oyster sauce, 1/2 tbs of soy sauce, 1 ts or none of dark soy sauce, and a trick is to add 1/2 ts of sugar to harmonize the taste. two important tricks for successful thai cooking are 1) you have to know the main taste of the dish you wanna cook, for this one is salty (but not overly) 2) make the taste mild first and gradually add the sauce to the main taste and your personal liking. have fun cooking !!

I used AYSC79's idea about marinating the chicken but used 2 TBSP oyster sauce as marinate while chopping the other ingredients. I'll definitely will cook this again but will cut the measurements for oyster sauce & soy sauce in half. Thank you for your video which helped me try Thai cooking at home for the first time!

Aunchalee- Why don't you cook the onions first to brown and carmelize them a bit? Don't most dishes ask that onions be thoroughly cooked first and then the meat added because it cooks so quickly. It seems to me in the extra time it takes to cook the onion, the chicken will get rubbery.

may i suggest u a few things here to improve ur dish?
1 use a little cornstarch,salt & sugar to marinate the chicken & let it sit for 30 mins( ck will taste better & won't be tough )
2 cook the ck first ,then drain out the excessive oil
3 make sure to stir fry the garlic,onion & chili till golden brown to bring out the flavor b4 put back the ck

4 use cooking wine instead of water
5 add 1 tea sp of sugar ( soy sauce & oyster sauce together make it too salty )
6 add in the basil & a little sesame oil
try it ,

Well, watched this video clip only by chance, and after watching it, i couldn't help & wrote down a few thoughts about it..
I once worked as head chef for some seafood restaurants in the southern TX
For some good reasons ,now i've changed my career,moved to a different field
but i still enjoy cooking & eating
I am Chinese ,used to have a beautiful Thai girl friend ,that's why i also fond of Thai food..Thai boxing..etc
