  • Its a shame most people have lost the skill in cooking. I try to cook as many real recipes as i can and show my 5 year old daughter what i'm doing so she learns too.

  • Mrs. Julie, thanks a ton for the amazing recipe, I was just wondering if I could use a more 'homely' egg substitute like ripe bananas ( which work wonderfully for my muffins ! ) or flax seeds ? Would love to have your input

  • I would at least substitute some of that white flour for whole wheat flour. While living in Germany I had my own home flour mill -- what a difference fresh-ground grain made in everything I baked!

  • Hi Cybermica,

    Try ground flax seed meal (1 tablespoon mixed with 3 tablespoons hot water) for each egg to replace. Beat in with the margarine as you would an egg.

    Another option is whole soy flour (1 level tablespoon per egg as a substitute). Mix in with the flour mixture.

  • I tried it... LOVED IT! Julie, I just visited your website and saw the fabulous recipes and videos posted up. But I noticed in one particular video, you used eggs. Not trying to put you on the spot, but are you 100% vegan or do you do it as a diet (because I do ;-)? Well, I'm neither vegan nor veg, but I do more days following vegan diets than none since it's the summer ;-) But I enjoy making the recipes off the websites and please post more! Thanks!

  • Thanks redegel1985! Glad you like the cookies. I'm not sure which recipe you're referring too, but I definitely don't use any eggs in the videos, only flax eggs (ground flax seed meal mixed with hot water) or egg replacers when necessary in baking. Maybe the flax eggs look like real eggs on film. Our videos only feature plant-based vegan recipes.

  • I'm not a v-gan but, out of respect to possible v-gan consumers, could I use free-range chicken eggs instead of the substitute? I have a ready supply.

  • Hi Dunbahl,

    Vegetarian consumers (and anyone else concerned about animal welfare) would appreciate free-range eggs, and I'm pretty sure they would work in this recipe. However, vegans do not eat any eggs or other animal products, free-range or otherwise. So while free-range eggs would work in the recipe, they would not be vegan.

  • Unfortunately, "Free Range" is a label that's unregulated by the USDA, and it's become a standard way for the egg industry to mislead consumers. Free Range chickens lead the same awful lives of non-stop suffering that all factory chickens live. The only truly cruelty-free eggs are from small, local producers that you trust. (This is confirmed by numerous sources, including Wikipedia - search for "Free Range").

  • I was puzzled when you didn't use real eggs. Looking at Bob's Red Mill website he has two egg replacers and one that he describes. The first one is named Ener-G Foods Egg Replacer that is described as Potato Starch, Tapioca Flour, Leavening (Calcium Lactate, Calcium Carbonate, Citric Acid), Cellulose Gum, Carbohydrate Gum. The second one is described as Vegetarian Egg Replacer which is made from soy and wheat.

  • The third one he gives the recipe of 1 tbsp Bob's Red Mill flaxseed meal + 3 tbsp water = 1 egg. Which one do you use?

  • I used the Vegetarian Egg Replacer (Bob's Red Mill brand). It works really well to replace eggs in baked goods.

  • Why were you puzzled? It's a vegan recipe... Vegans don't consume animal products. =P

  • I didn't know it was a vegan recipe and thought she was using butter as well. I haven't followed her cooking shows or books. Just caught this on youtube looking for Oatmeal Cookies recipes.
