  • Precisely, matcha is high-ranked green tea called Gyokuro milled to fine powder. Also used in tea ceremony.

  • @jujube150 sifting just airrates the powder and allows for easier intrigration into the batter. You'll just be stirring a bit longer if you don't, thats all.

And it's creative for the dog to narrate it. If you don't like it, then don't watch. Nor even waste your time to comment. >_>

  • We don't have any good Asian stores right in the Motor City, no, but there are 5 or 6 very well stocked Asian groceries in Windsor across the border.

    There's a decent store just off the corner of 14 mile and Main in Crawson, if you want to make the trip.

  • That's just mochi ice cream where you take a chunk of ice cream and put mochi around it.

  • Anyone know the brand name and product name in japanese for the kudzu starch powder? I've beeen going to various asian stores and whenever i ask for it, i get raised eyebrows as if i am crazy (not to mention how out of place a latin american looks in an asian store) or simply the grocers don't know about this porduct. Any input would be great!!!

  • Kudzu starch can be substituted by Potato starch I believe. The texture may differ, but it's still good! =]

  • yes, but like you mentioned the texture won't be the same. I have to have it perfect or authentic. But thank you  for the suggestion. Usually i would use potato starch to make kushi-dango with soy sauce and grilled. Very good.

  • When you make dango with potato starch, what other ingredients do you add? Do you cook them the same way Francis's chef does?

  • Mochi is sticky rice flour and mix in sugar optional with coloring. Another Way is to pour hot water into sticky rice flour and stir around like starch and microwave to cook through in an big bowl not pan. The cooked starch some time coated with roasted mashed peanut icing sugar mix cut in bite size, or mixed with red bean paste. Sticky Rice flour and Rice flour is two totally different flour different texture. Rice flour is usually for salty taste and Sticky rice flour is for sweet things.

  • @BabyK18316 mochi is commonly made of glutinous rice flour with various bean paste stuffing, or icing sugar, nut powder coating. If it is in boiled ginger water then it is dumpling.

  • @sih1688 I read that sweet rice flour is glutinous rice flour. But a sweet glutinous rice flour is needed to make sweets like this. Not just rice flour. I made sure to buy the right kind and managed to find a similar rice flour as the cook used in this video :D

  • @BabyK18316 normal rice flour is made from uncooked plain rice, whereas, sweet rice flour(glutinous rice flour) is made from glutinous rice which is not sweet at all, but has a nice aroma when soaked in water or steamed. Anyway, glutinous rice is mainly for making sweet stuff like eating with mango, egg custards, coconut floss etc. Asian rice dumpling(wrapped with bamboo leaves) is made from glutinous rice regardless is sweet or salty type of dumpling with bean paste or meat as filling.

  • @BabyK18316 Mochi is mainly using glutinous rice flour, Kudzu Mochi is to differentiate from normal Mochi by using Kudzu flour. You can use sweet potato flour beside potat flour for Mochi. Some Mochi have other kind of flour mixed in like cornstarch, tapioca flour, sweet potato flour to have a better jell like texture.

    The Japanese way of making Mochi is pounding of steamed whole rice instead of instant Mochi by using hot boiling water pouring into flours and voila you got Mochi.

  • The name in Japanese is kudzu-ko. Maybe that will help. Failing that, I wonder if regular arrowroot starch would work as well. You would be able to find that at a health food shop.
