Another option to the omelette is its Italian cousin, the frittata, which doesn't require flipping.

When I go for the Texas omelette I 'cheat' and use Wolf Brand Chili. No beans of course, because chili doesn't have beans in it.

What I do when I have to flip my omelette is I use one spatula to break it free from the cast iron pan because sometimes it does stick just a little, then once its fully free and it can slide around, I slide it half way onto a plate, then tip the pan and make it fold over onto the plate....then I slide it from the plate back into the pan if I need to have it cook longer. Usually that works well for me :)
