As for how the start works, that looks like the sticks are connected with thin thread. He pulls a loose thread at the start (Uncle Sam's finger) and then the last stick has a thread attaching it to the first of the popsicle sticks so when it falls it starts the popsicle sticks.
The first "Woohoo!" This should be regarded as a key moment in history.
