I think most of these are pretty good, save for Soul (he can be a little older), and Lord Death. Not that Johnny Depp wouldn't do good, but I think a good voice would be Tim Curry.

I totally agree with Chloe Moretz as Maka, but I'd switch Soul's and Chrona's actors and choose Johnny Depp as Stein and probably Jim Carrey as Shinigami - sama

You're casting choices are pretty interesting, but I'd say that Johnny Depp would seriously suit the role as the Shinigami, the role suits his mysterious and witty charisma. :D
