  • Can you get a cheeseburger and fries?

  • @VictrolaJazz yea but the burger is powder, the bun is smoke and and the fries are gelatin !

  • @avzeolla Sounds good to me!

  • Anyone know what the ingredients/techniques he was using with the leaves? Thanks :)

  • I think Grant handled the question: "And what's next for you, what's on the horizon?" pretty graciously. I wonder if the interviewer has eaten there. It's a polite and predictable interview question; however, it's not a question I would have posed (as if Alinea had been conquered and there must be something different to move onto. I appreciate Grant's response.

There are no words for this kind of art. It's truly food transformed. Such an irony for so ephemeral a medium.

    Respect!

  • interviewer is an arsehole, when he's talking about his illness he's staring at his lap!

  • It's amazing that these types of things happen to the greats. Grant is loosing his tongue from cancer - possibly his ability to taste. Bach lost his hearing. Monet lost his sight. They went on to produce their best work through those hardships I'm sure we haven't seen the best of Grant yet. Can't wait to see what he does next.

  • he's fine now

and has been for a while

  • (Yikes, no offense intended as your point is more than well taken; but historically speaking, Bach never went deaf... he had trouble with his eyes in his last years. Perhaps you confuzzled him with Beethoven.)

  • No offense taken, thanks for "unconfuzzling" ... love that word - looked it up in the urban dictionary - perfect choice.

  • @Nihendo Actually Chef Achatz didn't lose his tongue he found a progressive team of cancer researchers that were able to treat him with very painful chemotherapy. He did for awhile lose his ability to taste ,thus causing him to teach his team to taste like he could while he healed. He slowly grew back the layers of taste buds on his tongue as he beat the cancer and each layer came back in sections so he got his sweet/sour taste back first and so on..He was able to understand and blend new ...

  • CONT..Flavor combinations from this healing process..Now he is cancer free to this day and still making some of the most amazing dishes in the country and world.
