I think you've just solved one of the problems I've been having. You said "If you over-fill it, you won't get as much carbonation. If you under-fill it, you can get too much carbonation." I've had a few beers in a row which get over-carb'd over time. This is counter intuitive to me but sounds like it's time for an experiment. Thanks for the insight.
