the "red boxes " are flow switches from potter and are a set of contactors they delays are usally programmed from the FIP or controller
its a aux drain because its a smaller drain usally to set off pressure switches and the flow switches. the main drains can be a 2' or a flow test valve in different sizes
and the stale smell is yes water and usally the bactricide and hemp thread tape
times vary from state to state country to country
still though its the most relible fire suppression system
just heard that in the old days when we had sprinklers in my school we had FACP trigged sprinklers and somebody activated it, water in lines for 15 years is not so fresh any more...... they did not like it...

yes, those red boxes are flow swithces....they have a preset delay that activates alarms when water flows thru the riser

The red boxes on the wall do not have anything to do with the alarm, they are spare sprinkler head boxes.
