I like redfish, just not the classical "blackened" way. It's fine for the bigger, older fish with a stronger flavor but, i like the smaller slot fish.

I usually just fillet season with a little s&p and fry in butter& olive oil. With a side of brn. rice or a salad, it's great.

I'd rather have fried black Drum, but i'm not that pickey!!

I know what a "sailcat" is.I thought U were calling a "gaff" a "galf".

In New Orleans they feed them to people in restaurants, they call it "thinfish", because the flakes in the meat after it's cooked, is really thin.

Not bad, i have eaten it myself, just too many good eating fish out there for me to fuck with sailcats.
