WOW, these things are good! One of my favorite restaurants makes their Ruebens with marbled rye bread that they bake in their own kitchen! It's 20 miles away but I feel the urge to drive out there and order a Rueben RIGHT NOW! Yummmmmm.....
Butter both slices of rye. Put one face down in pan that is medium heat.
Spread some 1000 island on the piece of bread that is face down. Put on that the meat, kraut, and cheese. Put the other piece of bread on top (butter facing up) and flip it right away. Viola. No trouble at all.
Where might one obtain the right kind of corned beef for this sandwich? I'm thinking that the packaged deli meat at the supermarket is not the right kind is it?
@racl101 Yes the kind of corned beef at the store. Its in a sealed bag with brine and a pouch of spices. Just boil as directed. I would suggest using a dark rye bread and a good quality swiss cheese. Mayo and chili sauce is better than thousand island.

I just got addicted to reuben sandwiches and made my first one today. I couldn't find Russian Sauce, so I used thousand island, which I heard was an alternative. Next time, I'll try grilling the sauerkraut like they do here. Did anyone see when he added the dressing?
Heh! Pretty cool ! I don't really understand why you had to put the suisse cheese on the top of those stuff and let it melt in that kind of grill tough! Should it be more faster just to let it like that? Because when I cook some hamburgers, I put the cheddar on the meat which is on the stove, and it melts by itself ^^
