@pientje2007 Yes, eating cultures do differ a lot! I have tried making food from other countries that have been requested by viewers, and they generally have a different approach. I always like a change!
Tks Betty, I never used a mixer to make meatloaf, I used my kitchen aid mixer and it actually pulled a lot of the fat out of the chuck, excellent idea, your a great chef baker, tks bill. I am eating your meatloaf now and it's great!!!!!!!!!!!!!!
If I wanted to substitute chicken for beef instead in my meatloaf, could I ground it using a knife or would I need a processor or meat grinder? I don't have any other machinery besides a regular blender and a hand mixer. I have boneless skinless chicken breasts, could I use those?

@myiphonerocks3gS If it is mushy, there need to be more bread cubes or breadcrumbs. You can leave out an egg and use less ketchup to reduce the liquid, it necessary. The main thing is to get more dry ingredients in there--you can add oatmeal, cracker crumbs, etc.--just don't overdo it!
I have ur meatloaf recipe baking in the oven... I didn't have bread at hand, I know everyone does, but i don't at this time so I pit croutons. I love that your recipes are easy and simple. Love love love it.

It was 91 degrees here in my part of KY so didn't want to fire up the oven to bake the meatloaf, so I made patties and cooked in skillet on stove. After it was done I put in pie plate with cover and made some topping for the top. Few squirts of ketchup, 1 tsp br sugar and 1 squirt of wor sauce, cooked for 3 or 4 mins on low then put on top of patty

My mother (who grew up in the US) used to make this, but we fell out many yrs ago, so no recipe. After 20 yrs, I am thrilled to have it again. I used your mixer method, but added fresh chopped tyme & rosemary, and a glug of Henderson's Relish (like W'shire Sauce), plus v sour sourdough b'crumbs from a collapsed loaf. X
It's great how you take the time to post the recipe on the same page as the video. I can read the recipe and follow along with your demonstration. Your effort in doing this is greatly appreciated.

My dad made meat loaf so many times, and I always loved it. Sometimes, he would form the meatloaf into a long curved mound, kinda like a loaf of bread, rather then a brick(as in this video), and then after cooking it most of the way, he would cover it completely(except the bottom) in a layer of mashed potatoes to match the form of the meat (so it looked like a white mountain, kinda), and then bake it a little extra. Then you could slice it and you'd get your meat and your potatoes side-by-side.
Oh yes... Three slices of that meatloaf, a heapin' helpin' of the sour cream and chives mashed potatoes, and an ear of late season yellow corn... That sounds like just a little bit of heaven, Betty... *sigh*
@00MsLovely Yes, you can use just about any type of bread: bread crumbs, cracker crumbs, soft bread cubes, croutons, stuffing mix, etc. It's a good way to use leftover bread--but bread crumbs will be very nice!
This is how I make my meatloaf also, you don't add any other spices? The only differnt thing I do, (thats my secret)... LOL... is that I soak the bread cubes in evaporated milk before I add it to the meat :-) great video, I subscribed, love how

@abx547 Meatloaf is a favorite meal here in the states. It is like regular ground beef, but the mixture is very flavorful and the texture is moist and tender. I think you would love it!
Oh Betty yes, yes, yes...try adding some brown sugar to you ketchup it's soooo yummy !! Once I even basted my mealoaf in it every 15 mintues and oh goodness the ketchup, a tad of mustard, and brown sugar just clung on to my meatloaf just like you see in stores and nice resturants. But you have to baste it every 15 minutes for 1 hour. Now I always do mine that way ; ) Try it ; ) Smiles and Winks!

@SinnFein4ever You will love this meatloaf. It is very flavorful, and it doesn't need a lot of spicing up. If you add spices, maybe something like dried sage or cilantro and parsley would be good. Thanks for your comment!
Hi Betty : ) Don't use too much mustard as mustard is stong and goes a long way. Remember just a tad. Taste it before you put the Ketchup, Mustard & Brown sugar mixture on it. Make sure you have it just right to your liking. I like mine a bit on the sweet side. : )

Hi Betty U should try this..I make my Meatloaf just like yours.Then my topping is Ketchup,A Tad of Mustartd& Brown Sugar to taste(depending how sweet you like it) then pour it all over your meatloaf I put ketchup inside my meatloaf.But that taste of mixing the ketchup,mustard&brown sugar in a bowl &pouring it all over it the meatloaf is GREAT. U should try it. SO Yummy If U don't ike mustard you can leave that out, but a tad of mustard really makes it shine & is SO Yummy! Smiles&Waves to you!
If you use bread cubes, use 4 cups, but if you have fine, dry breadcrumbs, you'll only need about half that much. Just use breadcrumbs or crackers in an amount that would be equivalent to the 4 cups of bread cubes. Thanks for your question!
Wow, Betty, you have sold me on using the mixer instead of the hands. I plan to make this but with *unsweetened* ketchup. After discovering the *delicious* tomatoey flavor of unsweetened ketchup, it's all I use now. You will *never* go back to regular after you've had the unsweetened.
Betty, the texture of yours looks great. I think the mixer (or at least using a couple of forks) is the key to it holding together so well, because the heat from our hands makes the loaf fall apart. But I'm going to start using the mixer, because that texture is just perfect. Thanks!

The only yeast roll recipe that I have in bettyskitchen right now is a super easy spoon roll recipe. I plan to do another yeast roll recipe before Thanksgiving. I made your meatloaf last night and it came out really good. I didn't use a mixer though. I'm a lazy cook.:-) I also found I was out of bread and so I used Italian dry bread crumbs instead. The aluminum foil idea is great! Best meatloaf I've made yet. Can't wait to try another of your recipes.

I'm going to try this recipe tomorrow as a surprise for dinner.
I'm visiting my grandmother (and other relatives) for Easter, and she loves meatloaf.
I'm going to try adding mushrooms also.
I want to add some spices, as well.
Any suggestions for what kind I should use?

@SinnFein4ever You will love this meatloaf. It is very flavorful, and it doesn't need a lot of spicing up. If you add spices, maybe something like dried sage or cilantro and parsley would be good. Thanks for your comment!

@SinnFein4ever If you have fresh parsley, use about 3 tablespoons. For dried parsley, use only 1/3 as much, which would be 1 tablespoon.

I made your meatloaf, and your smashed potatoes for dinner tonight, for my mom, my sister, my grandmother and I.
It was a hit!
My grandmother said that it was even better than HERS!
Everybody said that it was the best meatloaf which they had ever had; and everybody asked for secconds!
My grandmother even said that I should become a chef.
I told her that I couldn't take credit for the rescipe.

Hi Betty : ) Don't use too much mustard as mustard is stong and goes a long way. Remember just a tad. Taste it before you put the Ketchup, Mustard & Brown sugar mixture on it. Make sure you have it just right to your liking. I like mine a bit on the sweet side. : )

@ohpineapples I have made this particular meatloaf so many times that i don't taste for flavor. It really needs the ketchup and can use just a small amount of mustard. It tastes wonderful! Thanks for commenting!

Hi Betty U should try this..I make my Meatloaf just like yours.Then my topping is Ketchup,A Tad of Mustartd& Brown Sugar to taste(depending how sweet you like it) then pour it all over your meatloaf I put ketchup inside my meatloaf.But that taste of mixing the ketchup,mustard&brown sugar in a bowl &pouring it all over it the meatloaf is GREAT. U should try it. SO Yummy If U don't ike mustard you can leave that out, but a tad of mustard really makes it shine & is SO Yummy! Smiles&Waves to you!

If you use bread cubes, use 4 cups, but if you have fine, dry breadcrumbs, you'll only need about half that much. Just use breadcrumbs or crackers in an amount that would be equivalent to the 4 cups of bread cubes. Thanks for your question!

Wow, Betty, you have sold me on using the mixer instead of the hands. I plan to make this but with *unsweetened* ketchup. After discovering the *delicious* tomatoey flavor of unsweetened ketchup, it's all I use now. You will *never* go back to regular after you've had the unsweetened.

Betty, the texture of yours looks great. I think the mixer (or at least using a couple of forks) is the key to it holding together so well, because the heat from our hands makes the loaf fall apart. But I'm going to start using the mixer, because that texture is just perfect. Thanks!

The only yeast roll recipe that I have in bettyskitchen right now is a super easy spoon roll recipe. I plan to do another yeast roll recipe before Thanksgiving. I had never made meatloaf before and it came out so good!!!! The only think i did different was not use the mixer and used different bread crumbs.

I made your meatloaf last night and it came out really good. I didn't use a mixer though. I'm a lazy cook.:-) I also found I was out of bread and so I used Italian dry bread crumbs instead. The aluminum foil idea is great! Best meatloaf I've made yet. Can't wait to try another of your recipes.

Hi! Thanks for your comment! I don't consider cheese to be a standard ingredient in meatloaf--although it is good. I think most people in the states do something similar to this recipe--which tastes excellent! I have plans to make mini meatloaves sometime. I could put cheese in those! Thanks again!

I was quite suprised to see no one had yet commented about this video, 'cause most everyone loves meatloaf. Since you use cheese a lot in many of your recipes, I was somewhat suprised to not see cheese somehow incorporated into your meatleaf, but it looks delicious none the less.
