Bluegrass and American old-time fiddle also does this alot. Sometimes fretting two strings with one finger, its really a unique sound! Then again, those styles are really products of Irish and Scottish fiddle playing.
I think Kevin is one of those few fiddlers, whose playing alone, unaccompanied, really makes you want to dance. He's just irresistable. Actually, sometimes I like it much better when there are fewer players than you would find in a pub session. Just give me a fiddler like Kevin, a good bodhran player, and perhaps a whistle or flute player, and that would be more than enough for me!
I have one of his CDs, "If the Cap Fits", and had I not actually seen him play some of the songs on it, I would've thought that it was more than one fiddle player. Much of this CD is just him playing with no accompanyment. It's like he is playing more than one disctinct voicing in a song and he is plaing it in perfect harmony. I wish I could put it better in words but you said it best. His playing makes me want to dance.
Be aware however that he played all the parts but they were different recording sessions. I.E record main melody then seperatley record a harmoney and super impose the two in a studio. However this is not to say the man doesn't play a mean fiddle, great singer aswell!!! He used to sing in his younger days.

@MrHathouse The last reel is Beare Island by Finbar Dwyer. I don't think its on the The Lonesome Touch album but I could be wrong.

Got to be one of the greatest Irish fiddle LPs ever. IMHO, of course.
It was my first Irish Traditional music record and it's still my favorite.
