  • Everybody cooks differently, and they have the right to do so. :) if u don't like it, don't eat it. There's no reason to try and correct someones cooking. There's also no reason to correct where ceviche came from. Or spaghetti, crasser salad, even popcorn for crying out loud. Which cares? Sit back and enjoy YOUR food :)

  • I live in Peru, and if anyone tells you that you've done a poor job, just ignore them. You have done an excellent job with this dish - I love your shortcut method as well. Just a tip: try making ceviche with fresh octopus.

I have plenty of latin friends and they all agree with me that some of these comments are so ignorant its embrassing.. I have a couple of friends straight from equador who told me themselves they dip the shrimp real fast to make the lemon soak..its the same results and the shrimp won't cook! Here you are showing us how to do it for free and so easy and that's the reaction? shameful!

  • @conniewalker79 Actually you do see the Italians getting mad about American pizza (real italians not US born), likewise for Asians. I am not Asian but can't stand how it is near impossible to get any that isn't fast food in most places. Personally I think it is important to master the recipe as close to the original as possible to start, in order to understand it enough to experiment in the right way later.

  • @keithsnow. this is a very VERY good recipe. I have read the posts that are complaining about this not being authentic and you know what.....they still watched your video. Had they been paying a little better attention they would have heard you explain several times the shortcuts your were making, why you were doing it that way, and the alternatives. I looked thru several other videos to find this one. So thanks for taking your time and making this video for those in need of simple like me.

  • "Chef" snow, this is the most pitiful way to prepare this wondrous dish that I've ever seen.

    This does not require a 24 hour marinade, Peruano chefs, who invented this dish, often recommend 1-2 hours at most. And you fuckin boiled the seafood. This immediately makes it NOT ceviche.

    I think you should just stick to what you know best and leave this to people who know what the fuck they are doing

  • Great tips man, Just had Ceviche for the first time Today. Had it in Tecoman Colima Mexico. VERY tasty. Although mine was chopped up quite finely and then it was great as a taco chip additive.

  • Hi, I disagree with your statement that flaky fish "will not work". As a matter of fact, flaky fish or any type of white fish will do a fine ceviche. The ceviche is not diced, that is purely a US thing. Authentic ceviche is chopped very finely. Overall it's a nice video.

  • My mom made up her own version of ceviche, I've never seen anyone do it the same way she does so far,but its absolutely scrumptious! She uses tilapia fillets and for some reason she doesn't like to cook it with lemon so she cooks it in butter instead and seasons a bit. Then she adds scallions, tomatoes, cucumber, cilantro, radishes, and a bit of cumin. We always eat this with store bought corn chips or tostadas and Valentina hot sauce. And we add lemon & salt to taste. Really delicious! ^^

  • El ceviche ya es un plato internacional, al igual que la cocina peruana, reconocida en el mundo entero. Por ende, al igual que la española, italiana, mexicana, francesa, etcetera, tendra sus variaciones "hechas por cheffs" en todo el mundo pero como cualquier cocina, si quieres probar el original y el mejor ceviche, ven a Perú. Lo mismo con la pizza, si quieres probar la original y deliciosa pizza, viaja a Italia... ¿Que problema hay? No seamos tan conservadores.

  • You definitely do not need to cook the fish in water, Keith, the pure lime juice will do the job in 1/2 hr at any temperature or altitude. In Peru we serve the seafood only with onion (in julienne) and hot chilli pepper -preferably red, for looks- chopped finely; (some people add fresh grated ginger) and sweet potato and corn on the side. Oh and ignore the silly comments, I think some people get too "territorial" but do try and keep the "soul" of the dish. Thanks for spreading our Inca cuisine.

  • it pains me not seeing any salt in this dish. all the flavors you know were gonna be great, but it NEEDS salt. i could taste it electronically and it was sour and bland, with the lime and cilantro taking charge of it. That's great and all but let's try seasoning things properly as well. but with that being said, good vid.

  • There is a food plate in Peru called "Escabeche" which is made with fish or chicken

  • ceviche can be cook in 4 to 10 minutes. the lime will do its work. You dont have to marinate it all night. Shrimp and scallops can be put in a little boil water for 30 seconds, i will buy that. Lime will cook the fish in minutes.

  • Thanks for posting. I don't get it why peruvians think they invented ceviche!!!! as far as I know the islands in the pacific were cooking fish this way long before "limones" got to America. In mexico the spanish galeones that departed from Acapulco to the Phillipines brought back the lemons and limes and the way of cooking ceviche long before limes got to South America. anyway thanks for the recipe.

  • Hi keith. I have been all over latin america. The typical "pobre" ceviche is just fish. great choice with red snapper. Conger eel, Tilapia, even catfish works as well, the later 2 being cheap in the US. You can drastically cut the "cooking" time without boiling is you shave the fish extra thin. it will be ready in a couple of hours if you do it that way. We actually peel the lime so there is ZERO zest flavor. saludos.

  • Thank you for posting the recipe! To all those negative comments, is great to have pride of ones country and its culture and food. What is not cool is to say some one from different background does not have the right or the ability to cook a great dish, like ceviche and make it their own. Being so far away from home I appreciate Keith taking the time to share his recipe and I will try it as I will try many other ways until I get the hang of it and make the ceviche my own as well.

  • Peruvian ceviche is definitely the best in the world. You need ingredients that are hard to find like "rocoto" and Peruvian "Aji Amarillo" a Peruvian yellow pepper. Also, red onions, chopped rocoto and cilantro are important as a garnish. No tomatoes, celery or avocado (this is not a freaking salad!. NEVER BOIL THE FISH, THE LEMMON COOKS THE DISH! Serve with roasted Cancha (chulpe) and boiled yams to get the salty/sweet experience! No tortillas! ENJOY, anything else is just crap!

  • This recipe is COMPLETLY WRONG! is very upseting to have any so called chef, ruining one of our more traditional dishes. You will never ask a peruvian or mexican the recipe for the perfect burger. So don't go thinking this is the way to make ceviche. Ceviche and escaveche are very different kind of foods.   • I like the idea of putting seafood few seconds into boiling water and then in ice water, this kills the bacteria that may have, because in some ways is pasteurized.

  • A few days ago I made this recipe for ceviche and it was really good.

    Do not understand why some Peruvians are so chauvinistic. All dishes can be made in many different ways and be very tasty and also preserve its name. Now I'm living in Mexico and here you can find hundreds of good an tasty recipes for ceviche. As I suppose it happens in many other countries.

  • i agree. Im for Ecuador and we eat ceviche as one of our typical dishes. it should be made to your personal taste. I think you did a great job. I haven't tried the red snapper, but we did ours with rockfish and turned out great.

    That is because Mexico has been making ceviche long before "limones" arrive in S. America. I took a trip to the islands in the pacific and the natives were making a kind of ceviche there too. the difference is that peruvians put sweet potatoes in their ceviche, I personally prefer Ecuatorian o Mexican ceviche. I don't like the sweetness of the "camote" in it. rgds,

Like the pizza or paella valenciana, you can make a lot of variations BUT if you want eat the original ceviche, come to Peru. It's the same with Italy and the pizza or Spain with the paella.
