  • When I make ravioli I only use half semolina flour and half whole wheat, because Semolina ends to get a bit expensive and you get a little more nutrition from the whole wheat pasta. Also for the filling I use one carton of ricotta, 1 block of cream cheese, one whole egg, about 4 cups or more of mozzarella, and a small dash of nutmeg. You can get creative with it and add things like crab legs(pull the meat apart and mix in well), spinach, and other cheeses.
