  • haha.. thats funny. I just bought a 3mm thick chinese cleaver made in hong kong of stainless steel. Cost my $10NZD. had a grind that couldn't cut anything. Reprofiled it and convexed it.. now its a great knife. nothing wrong with cheap sometimes. :)

  • @knivesandstuff Exactly. I did some cut test with the knife. Slices thru orange like butter. Never cut with anything like it before. My other knife doesn't come close...

  • I have been wanting to do this to a cheap Joyce Chen kitchen knife that I have, which I kind of ruined when I attempted to do something similar when I had less knowledge. Now I know how loooooooooong it will take! This video might be a cure for insomniacs! ;)

  • @traderjoes hehe...the whole reprofiling & sharpening process can be about 10-15min if I wasn't videoing. I actually took my own sweet time n put in excess strokes, so it took about 15-20min. Talked and did a lotta crap I know...LOL. I'm looking forward to my Victorinox bud :-D

  • Hi mate, after doing a lot of woodwork, I needed to sharpen my Falkniven F1. Followed your instructions (convex edge sharpening video) and am happy to report that the technique you specified works brilliantly! Its razor sharp once again. It was the first time i sharpened a knife using carbide paper and a strop. Dont think ill be going back to stones anytime soon.
