I think you need to reset the ram (pram) My iMac fore i5 was taking a little over 1 min to fully boot. I reset it the ram and now it takes around 23.5-31 secs. If you add external driver so and so... the boot up time will take more time and thats is normal.
Just a few things, Boot up speed if far more affected by Hard Drive speed than processor speed. In addition, the number of users you have allocated to one or the other will also affect boot speed. As far as boot down, if you have transferred data from an older mac, you should make sure that you don't have a huge mix of 64 bit and 32 bit processes as again, that will affect shut down speed. These things are key to an accurate comparison

Hmm... still, with the faster processor and RAM, one would think the unibody 'Book would outpace the SR model, even with all of the older data files. Perhaps it's running some PPC/UB apps in the background or in the Menu Bar, which you may have copied off your iMac, but that's a tad odd.
I have a similar mid-2007 MBP that I got almost two years ago, and under Snow Leopard, boot and shutdown times are incredibly fast. The MBPs are truly stellar machines.

@afg96 How much it sells doesn't mean anything.
DDR3 is around 3-5% faster than DDR2 in average applications that don't run on amounts of ram.
However if you are a video editor and use for say After Effects. The ram preview will be faster much faster with DDR3.
And besides, working at an apple store doesn't mean anything.
