OK.. made this again for the 2nd time last night. I used a combination of dried pineapple and dried ginger(mostly pineapple.) Soaked them just like the apricots. Pepper used, Orange habs, red congos, and benni highlands. Came out AMAZINGLY good. Consistency same as before. I love pineapple, and this is sweet and hot. THANKS AGAIN!!
Quick Follow up questions: 1) Can I use canned pineapple instead of apricot, will pineapple set? 2)Once sugar is at initial boil, how long let it boil before pectin. Thanks again! :-0)

It is very fruity, and I like that. This is my FIRST jelly ever, and I am very thankful to have had a good teacher and recipe.

I made this on Monday and can't stay out of it - it's so good. Hubby calls it Habanero Napalm. Brought a jar to work on Tuesday and had to bring another one on Wednesday everyone loves it. I never thought I would ever be interested in making/canning jelly but these pepper jellies are killer! Thanks for the inspiration and sharing your recipes. Your Raspberry Jalapeno is next on the list!
Beautiful jelly! At what point do you shake the jars for a more even distribution of the contents? I have to make this! My boss and her husband will LOVE this! It will make the perfect gift for her at Christmas, they love habaneros. Thanks for posting.
@Allen2045 Thank you so much you are so sweet. It truly is one of the prettiest jellies I make. And the taste depends on what it is with but not hot just full of flavor. If you like mild peppers you would love this jelly. Habaneros have a very distintive flavor as do all peppers. It makes such a pretty gift. Thank you and God Bless
@katzcradul Thank you so much. It is truly is my favorite because of how pretty it is. You do have to shake the jars like butter so it is all supended evenly. I sell this jelly for 6.00 a jar.
