Well you are making a completely different point. The particles would still exist, only YOU wouldn't be there to see it. That doesn't mean it doesn't exist. By your logic that would mean if everyone were blind, colors wouldn't exist. But they do, only nobody has the senses to see it. This has nothing to do with inevitable eternal death though. When you die, you will turn to dust. Everything in the universe will still exist, but you won't see it, because your senses are gone.
