This is pan frying not broiling. To broil your steak you use your ovens broiler! To broil is to cook with high heat from above without the searing effect of a pan.
Never cock with butter LOL. Its better to cook a steak with a light olive oil. Much better. Butter smells gross when its cooked at high temperatures. 3 to 4 minutes on each side is better to get a good medium rare for a thick steak. Also you need to keep the steak out for 30 minutes to get it to room temperature, never cook a steak without letting it reach room temperature first.
he made a mistake u need HIGH heat to carmalize each side Fast, 4 minutes each side at 600 degrees
