The focus on the 35mm adapter doesn't look quite right. It's be great if you could list out what 35mm adapter you used, which lenses, and what f-stops you set the adapter to versus the Canon. Without that information you can't really made a valid comparison I think.
The 7D looks too contrasty, but thats only a matter of shooting flat. The difference in detail the 7D is showing with the same lighting is much more interesting. I like the EX1, but for this scene, 7D with flat picture profile.
Did you do any colour correction afterwards?

If I remember both was shot at a 4 with Nikon 24mm lenses. Matched both ISO's.

The 7d Have few preset setting of image style, standard is much constrast, you can usa flat and, add constrast and levels in post and get hi quality!
