I like the way it is shown in the vid. I would not hand over the breaks during turn. But anyone can do it the way he/she wants. I have seen people hand over their brakes in perfection, so why should they do it differently. I however prefer holding the correct brakes for the flight while pulling up the wing.

I have yet to see a pilot who looks good and in control kiting like that when it gets a little rough.
For a student it takes 10 longer to get the glider under control, specially in windy situations. As an instructor I'd rather have them struggle for a few days to find the brakes after they turn around than teaching them a lifelong dangerous take off technique. cross eyed technique

And letting go of your breaks in windy and gusty conditions is not smart. Take your time and learn this instead. Only very oldschool pilots still use the old technique. All instructors should teach this method.
Easy to learn and much safer. I have 100% controll with it and I never ever break with the wrong hand.
