In gmod 10, you can turn off the beam effect with the press of a button in the options section of the spawn menu.

I think you open the spawn menu, then click the options tab, and click the hiding tab in the new right hand menu, where you will find a box with Draw Physgun Beams next to it. Untick it, and the physgun beams will not appear.
