  • very confusing.  Its either a mousseline or a mousse. Different preparations. Mousse made with cream, mousseline made with cream and egg or eggwhite.

    Mousse are not cooked and served cold, mousseline cooked and served warm or cold. And, wrapped in cheesecloth so the poaching liquid if desired can add flavor.

  • @SuperOlds88 also a mousse typically has gelatin when its shape needs to be preserved.

  • It's spelled "Galantine".

  • I remember watching Chef Calhoun do this, he did this on the fly, and I had to leave for fear of laughing during the filming.
