Could you remote wipe if someone took your phone and just turned on airplane mode as soon as they got it and until they were done getting any potentially useful information? If they can that seems like a pretty big flaw.

Though not specifically related to IOS5... the thing that draws the most power by far for me is Push Email (not to be confused with Push Notifications).

Even setting it to check email every 15 minutes improves battery by a massive amount compared to having Push on.
