Once X-Ray generation ceased, the counter would return to measurements reflecting what you would expect from its native radioactive background environment. Assuming your using an accelerator and not Isotopic Radiography.
This is nothing new. There are a few other well-known X-ray artists. Just Google "X-ray Art" and you will find them. The silly thing about this video that first struck me was the ridiculous Geiger Counter sound in the background. X-rays are not radioactivity, and do not cause a random clicking sound from a Geiger Counter. I suppose they did that to get people's attention, but it's very inaccurate and should not have been done.

The geiger counter would register the radiation because it is ionizing radiation...x rays are gamma rays.
