1. make sure you have a good camera
2. use a tripod or something to stabilize it
3. Good lighting
4. If you edit it, render the video high quality
5. Use the youtube uploader

Use the iphone simulator, don't bother using a camera, why would you when you can use screencap software? much better quality...
