You can, but remember olive oil has a bitter taste to it. If you want to you can try using 2/3 Canola oil 1/3 Olive oil. I think that will make it less bitter. Also, it's harder to get air bubbles into olive oil so you may end up with a hurting arm ;)

I agree, but the eggs I use for mayo are superb quality and I know their origin.
If you are worried about bacteria and still want to keep the classic mayo flavor, you can try hard boiling an egg and using it's yolk only. The mayo doesn't come out as smooth but it's not bad ;)

@shibby22 Yea I did and it turned out great. Better then store bought. The only difference is that I got lazy and used an electric egg beater lol.

The acid in the lemon juice kills the bacteria in the raw egg. Mix the yolk & lemon juice together first, then add the oil.
But yea, I don't add any other crap either.
