Having watched none of the above shows, I have to say I thought True Blood was the best (made me REALLY want to watch it, but I don't watch anything with vampires on principle, lol) and then Deadwood (sadly, I've disliked western since I can remember). And, the Wire was OK (But, I hate cop shows too, so that's fine, O_o). The other two were just...there. Dexter does have a good opening and is a good show.

to be honest the best intro of all of them is Deadwood. the others are ok, but Deadwood is still the best.

I like your list, except I would substitute Dexter for John Adams. The John Adams music is great, but the credits just don't really impress me. Also, Cleveland is not so bad, despite what you have heard ;)

BSG title sequence was consistently crap even though the show was AMAZING.
Best ones are True Blood, The Sopranos, Mad Men, The Wire (Season 1), Big Love and maybe Californication. Also Huff (if you've watched it - it's an old ~2005 Showtime drama).
