Why not set it up with a small 12V car battery and the proper voltage regulator.. use it to charge the battery then you can power an inverter off that to do something.. Perhaps put a rheostat in series with the field so you can "turn it down" a bit if its extremely hard to pedal..
That's an interesting setup! I remember reading an article in "the mother earth news" about using a car alternator hooked up to a lawnmower engine as an arc welder.
