Chicken should cook in whole & boil for about 10- 15 min & off the fire/heat let it soak for another 10-20 min depend on size. chili sauce no need to cook bland chili & garlic add some lemon/lime juice then chicken stock before serve.Ginger sauce - bland ginger & little garlic then sautee it till fragrant. The rice can be sautee in butter or the chicken fat then add chicken stock to cook! Pandan leave of spring onion or both !Just some suggestion!
thought there's supposed to be pandan leaves in the rice?

@benzibam i think only malaysian and singaporean add pandan leaves ... others mainly use spring onion, particularly taiwanese dish

this is not hainanese chicken rice. you have to put the chicken in cold water.

different people have different style of making the rice. my dad who is hainan has his own way of making the rice and everything else too.
