If I were you, I would use a trihull design to combat wobble from waves. Your prop is too small, needs 50% more surface area to lower your cadence to maintain lower heart rate. Your boat is really narrow, but good design for a monohull. Those sponsons really slow you down, hence having 3 hulls would be more effective. A friend and I built a cat type boat that did 10.5 knotts in 1988. it was hand powered!
Looks like as much fun as a bad case of hemoroids and using 400 sandpaper for toilet paper. Passtimes of the idle, new moneyed gentree. It's a very nice peddleboat.

seems to me the ride is too choppy.
you need some vertical fins to keep it from hopping from side to side when it is rough.
