25mins pressure cooker, and 2.5-3.0 hrs on pot, simmer.

My favorite filipino dish. I like this so much that I've taken the time to learn it. Now I can have it anytime I want, but it takes a long time to cook because the oxtail takes hours and hours to get tender. When time permits, I like to use real peanuts, but peanut butter is ok too. So I make a big batch and freeze the left over in topperware for individual servings(meat and sauce only). With big pot like this, it lasts me very long time.Then bagoong on the side of my dish to taste..yummm!

how much peanut butter did you put? i cooked kare-kare before but it did not taste good because of too much peanut butter (so it taste like peanut butter instead of kare-kare) coz i thought its gonna taste good if i put more.

in my kare kare i wont eat it if it's made with chunky peanut butter, the peanut butter has to be smooth! also barrio fiesta or kamayan bagoong, not the normal pink bagoong.

and no vegetables.

Kare Kare in moderation is the bomb yo! Just don't eat too much becuase you gotta have the Inasen or Malamaang (Bagoong) etc. That makes it taste great with the rice...Do you know Filipinos have been eating this for over 400 years? I wonder what we ate before the Spanish came? Probably healthier fish and vegetables and sabao?
