  • You forgot..Olive Oil! How do you flavor an acidic vegetable without fat? Believe me there is not enough drippings from the meat to truly infuse the sauce with flavor-carrying fat, always place a half inch of oil in the bottom of a warmed sauce pot.

    Also, another option is to blend the browned onions and garlic with your cans of whole tomatoes on puree setting for a few minutes. This crushes the tomato seeds as well and gives the sauce a more velvety consistency.

  • Wow, plain ground beef with some herbs? Tomato sauce from a can! I GOTTA try this!!! Pftt.... how uninspired. And what exactly was the pork and beef used for? Simply seasoning the sauce? What a waste. I don't get how this got into the NY Times at all.

  • Thanks, I used elements of your sauce recipe to make Thanksgiving dinner for myself. Although I was alone, making a nice traditional italian dinner made my day go smooth. I drank pinot noir red wine and listen to Pavorotti cds while I cooked.

  • I'm italian from naples and spaghetti with meatballs isn't a typical italian food...at most when we have nothing to eat we mix meatballs with pasta,but only in case of emergency,damn!!!

  • Never add that much water! Add tablespoons of water! Too much water not only makes the sauce thinner, but drowns the seasonings!

  • I use fresh tomatoes and I use Italian tomatoes where I place into a food processer as my family hates chunky sauce!

    After frying meatballs, I add to the juice to the crockpot!

  • To my meatballs, I add finely chopped onion (large) Basil, oregano, seasoned salt, pepper parmesan, 1 egg 1/2 cup breadcrumbs, i egg and one half cup milk and then I mix it all together! I use beef pork and veal.

  • I use fresh roma tomatoes and canned tomato sauce and puree. You can also used canned Italian whole tomatoes. Some people do not like chunky sauce.

    A little marjoram makes the sauce taste delicious as well. I prefer to cook my sauce in a crock pot. Add milk to bread crumbs as it makes the meatballs easy to form.

  • I cook my sauce for at least 18 hours! The longer it cooks, the better it tastes! I truly believe it!

  • I makemy meatballs from scratch! Fresh garlic and Onion and my sauce is made from fresh Garden tomatoes! I also add parsley, basil, sesoned salt and pepper. 1 Egg 3-4 cup bread crumbs and 2 cloves garlic to my meatball seasoning! I then mix meatball mixture and form them into balls and I add one tablespoon olive oil and fry meatballs until caramelized! Then I throw the meatballs into the sauce and then cook them for 12 hours in a crock pot! DEElicious!
