Some security tags will alert loss prevention or security if they're tampered with - the device in this episode appears to be one such. The string is not actually a string, but a loop of wire or cable, which when cut causes it to go off. I'm not sure if RFID is in effect with these devices yet, but if so that could be another tool to find shoplifters.
I saw a "refund" scam, which is even more insane. The thief buys a load of stuff, then comes back in with the receipt, takes stuff off the shelf, and claims he's "returning" it. You wind up with 2 for the price of 1 (or 66 for the price of 33).
@MondoBeno every barcode of an item is unique to that item. inventory pos systems keep active track of whats on the shelves and what has been bought, thats how they know when they need to buy more of a certain item. If you tried to return an item that hasnt been purchased they would know instantly.

Just run a strong magnet over the strip for about 2 minutes. It will become inactive and won't be recognized by the scanner things
