I tend to see the tree as symbolising human free will and the story symbolises human suffering and why it has to exist. It's a little different to how Christians see it but I think that was the original intention of the story.
And, adding to my last comment, corresponding with the second part of the video. The answer is Jesus, has always been and will always be Jesus. God is omnipotent, He knew before He created Adam that He would have to send His Son to save us. We no longer have to pay for our father's sins. Even back in the Old Testament, we didn't have to pay.. all God's children have to do to escape torment is to believe and obey. Call it hypocritical, nonsensical, whatever.

God didn't put sin on our hearts. We are human, and therefore imperfect and subsequently sin. The argument does go back to the Garden. Are we still paying for that? Perhaps. Even now Jo is sinning by disobeying her father and I. And she is willfully doing it. She's beginning to know right from wrong.

God did not set us up for failure. We were made in His image, and can choose to do evil or good. Yes, He knew they would sin and disobey Him, that's why He sent Jesus. Jesus died for all the sin ever committed, including the first one.

There's almost no point in saying anything anyway, as it won't lead you to consider whether I know what I'm talking about or not.. but no, Adam and Eve had no prior knowledge of evil, they knew only happiness and the purest unconditional love of God. Satan only made them hungry for power, "equality" with God, etc. Satan knew they would eat of it and then have an unquenchable thirst for power, knowledge, etc.
Wonderful, look forward to all the rest in this series. I think your thoughts are echoed by all that left Christianity. The Fall of Man (sin) in the beginning and Hell are the 2 biggest reasons I had trouble with Christianity.
