i think the main reason the fort are different is because the eastern country focus more on what something look like where as in europe they dont care they just want to fight

This battle plan was great because it conserved troops as much as possible. I'd say just replenish and build your navy and manually fight with it so that you can reopen foreign trade whilst defending it. The ottoman navy is comprised of fifth rates and galleys, so a few good ships will shred them to shreds.

I have an idea, for a bit of fun and to interact with the viewers even more, why not change the names of some of the units in your armies to some of the most interesting names of viewers. That'll really involve people actually being IN the army, in name anyway, lol.

If you approach an Empire castle from a corner the defenders cannot fire at you. You can station a howitzer on the diagonal from a corner as close as you like and eliminate all the defenders without assaulting the walls. The AI will sally out so you have to defend the artillery.

If I have howitzers, I usually use them to fire at that giant blob in the centre of the fort, so you don't have them all over you as soon as you start scaling the walls, but it's always a risk since you have to move them closer. explosive shells suck against artillery btw, it somehow decreases accuracy by -5000%

Why go for teh Capital of the Ottomans first..... I mean, I'm sure you have a well thought out plan that will work but, I would go for something less chance to rebel or, less chance to get it taken back from Turkeys army..... mate, with both of your harbours blocked you wont get much money.

the special ships included in the mod are much better then the ottomans. push them out of your harbours. you can't autoresolve the naval batlles cause the AI kinda sucks on that part.
