  • I used a mixture of videos on you tube, (and cantonese blog instructions too) for seasoning my wok. I have an electric stove and a flat bottom wok. I heated the dry wok all over until blue black, then added pig fat ( in UK, it is simple lard) and heated it on all sides to burn it in. Then cooled it to room temp and wiped clean, before repeating the process three times. Then fried/burned in a mixture of chives and spring onion greens until wok had a lovely shiney patina. Brilliant.

  • Look whether you are White , Asians or black people. It doesn't matter. This is just a video clip,  just chill out. Enjoy and be happy. Poh is very nice, 1st, 2nd it doesn't bother her anymore. She is bubbly, has a great show on Ch2, good on her. Let's enjoy cooking and put other things at rest . Thanks ! 21/8/11.

  • @frouzakisg No. this is the woks only contact with a hard metal scrubber. Unless you use acidic foods (Tomatoes, boiling water, or vinegar), the coating should be fine. Treat it as you would a cast-iron pan. Just make sure to always reheat-dry the wok after washing it, and to lightly coat it with oil after it cools, after every use.

  • @takadi Take heart, Takadi: just scrub it again, oil it, and repeat the process. As you cook with it, the coating will get darker and more non-stick. After using the wok over a year, it should look like hers. I am sold on cast iron cookware, and woks. To me, they're the best!

  • I love this show, not only for the food but the insight. One example, among many, is the fact that they can go in the kitchen of a restaurant and casually reveal to you the techniques for good food. When I started cooking to me the Asian dishes to me seemed secretive, but due to this shows insights there are no secret walls.

  • im still not keen on carbon steel. it may offer the best frying and never sticks when seasoned but it gives food a somewhat mettalic taste even slightly. i dont like the fact of cooking in something which will rust very quickly if not oiled. carbon steel woks seem to give food a funny metal taste. i liked them at first but now have started to go off them.

  • @iluvlamingtons chinese wok's are not non-stick when bought. When you season it, you're creating thin film of oil which creates a natural non-stick surface

    I can tell you that cleaning it with the steel wool is correct. The seasoning I believe is to create better contact between the wok and foods. I am not too sure. I guess sorta like heating up the pan and then applying butter throughout? It doesnt matter that much.

  • Why would it matter what race she is, the show was a cooking show where one's cooking ability SHOULD have been celebrated and treasured, but instead it decided on ur typical fat mom who could sell moar books. So in essence your saying an asian can't represent Australia? That is racist in itself becoz ur implying that to represent Australia you hafta be white, so you can say multicutural all you like but we all know most of u "Aussies" are closet racists.

    Does anyone really care enough to be emotionally invested? Masterchef was a crock of shit, riddled with dubious rules, rulings and obviously prejudicial sentiments on the part of the guest panelists.

    That "Cookbook Expert" that sauntered in, obviously had it in for Chris from the moment she deduced that he wouldn't appeal to the WD morons.

    The whole thing is a flaccid exercise in marketing deception perpetrated against gullible saps. "Cyclone Julie" is a pliable ditz.

  • @Pokemongo1 I actually think this show is fantastic (at least the parts where she speaks about asia) there is no show like that in Québec and Canada... I wish I could look at this at home... I followed her in MasterChef she is just great, I love Asian food!

  • I thought she came second? Regardless, give me some good and genuine Australian dishes, really. If you'd seen her show, you'd know she does a lot more than Asian, in fact this is either the first or second thing she has done that is Asian, the rest being of completely different culture.
