for exemple: in games like aero fighter, against bosses there could be intense moment where you don't even breath at all

You use your eyes to tell you what to hit, and your ears to tell you when to hit. It also helps that he's probably heard this piece of music before.

To people that don't play, this looks impossible, but players see patterns, which makes it easier. You don't look at each individual note.

Him being Asian really does have a lot to do with it, but not for why people think. It's not a genetic thing, it's culture. Asian, in this case Japanese, have a much more rigid life on average, that most Americans just don't comprehend. This leads them to excel at the things they put their effort into, such as schoolwork, they become good at games like these (Music and reaction time?), and so on.
